I had made this watermelon salad dish once. It was an inspiration from watching an episode of Top Chef last year. This time I reduced the spicy elements.
To server for 4, here are the ingredients:
1 small watermelon (3 – 4 lbs), diced
16-20 yellow mini heirlooms tomatoes, halved
400g goat cheese
400g fresh mozzarella
1/2 cup sweet basil
1/2 cup hazelnuts, halved and slight toasted
2 tbsp black and white sesame seeds, for garnish
Salad dressing:
1/2 cup balsamic
1/2 cup extra virgin olive oil
1/4 cup maple syrup
1 lemon, only juice & zests
1 tsp chili flakes
1 tbsp Dijon mustard
1/2 tsp salt
1/2 tsp black pepper
